Hitsumabushi is Nagoya's soul food that offers a variety of "delicious" experiences.
To enjoy Hitsumabushi, start with it as it is.
Next, enjoy your favorite condiments (green onion, wasabi, nori) in your own style.
Then pour soup stock over it and serve it chazuke style.
The flavor of the dashi broth and the eel are a perfect match, making it an excellent dish.
